Buku Sayisa, meaning "Blessed Valley," is located in the Hambela Wamena region, a high-altitude area that reaches up to 2,300 metres above sea level (masl), making it one of the most elevated coffee-growing regions in the world. Due to the rugged, uneven terrain, farmers deliver their coffee cherries to the processing site on horseback. The cherries are carefully handpicked, with farmers selecting only fully ripe ones. This attention to detail, combined with the region's nutrient-rich red clay soil and high-altitude climate, produces a coffee with a vibrant and complex flavour profile. At the processing station, the cherries are dried on raised beds for 2 to 4 weeks, with regular turning to ensure even drying. After drying, the coffee is stored in a cool room for a few weeks to allow the flavors to further develop. The beans are then hulled to remove the outer skin and pulp, followed by milling to strip away the parchment layer. The result is a rich and sweet coffee with flavour notes of cola and caramel, with fruity raspberry.
